Aloo Frankie

Preparation Time: 15 min Cooking Time: 30 min. Serves 4


Ingredients:

For Frankie:

4-5 Potatoes Steamed

1½ tbsp Ginger Paste

1 tbsp Garlic Paste

2 Green Chillies Very Finely Chopped

2 tbsp Coriander Very Finely Chopped

⅓ cup Fresh Tomato Puree

1 tsp Lime Juice

¼ tsp Asafoetida

½ tsp Turmeric Powder

1 tsp Red Chilli Powder

½ tsp Coriander-Cumin Powder (Dhana Jiru)

2½ tbsp Frankie Masala + Extra to Sprinkle

½ tbsp Sugar

Salt to taste

2 tbsp Oil

1 Pack of Deli Wheat & White Wraps

½ Baby Cabbage Very Finely Shredded

1 Red Onion Very Finely Shredded

1 tbsp Coriander Finely Chopped

⅓ cup of Green Chutney


For Vinaigrette Chillies:

6 Fresh Green and Red Chillies

⅓ cup White Vinegar

¼ tsp Salt


Method:

  1. Peel, wash and steam the potatoes, mash them by hand, and set them aside.

  2. Heat the oil in a pan. Add the asafoetida, ginger, garlic paste, and green chillies, and sauté for a minute.

  3. Add the turmeric powder, red chilli powder, coriander-cumin powder, sugar, salt, and sauté for 30 seconds. Add the tomato puree and cook until it thickens.

  4. Add the mashed potatoes, lime juice, chopped coriander and Frankie masala, mix well and cook for 2 minutes; remove from heat.

  5. Let it cool, then make a cylindrical shape of the potato mixture, press in a rectangular shape and set aside. (about 5 inches long and ¾ inch thick, as in the picture)


The Rasoi Recipes

Assemble the Wrap:

  1. Heat a flat pan on medium heat, add half a teaspoon of oil and butter, take the potato Frankie Patties and cook them on both sides until light brown.

  2. In a pan, warm the wraps on medium heat for a minute or two on both sides.

  3. Spread a teaspoon of the green chutney on the wrap, place the Frankie Patti in the middle, add some shredded cabbage and onions and sprinkle some coriander.

  4. Pour some chilli vinaigrette, sprinkle some Frankie masala, and roll the filling in the wrap.

NB:

  • Grate some cheese on top if you desire.

  • You can have both green and spicy red chutney with this.

  • I have kept the wraps oil and butter-free, but if you desire, please use them.

  • I have used ready wraps with this recipe, but you can make them.
