Ingredients:
24 Pani Puri
1½ cup Nylon Sev
3 Medium Steamed Potatoes Finely Chopped
1 Can of Kala Chana (Brown Chickpeas)
2 Red Onions Very Finely Chopped
1 Big Vine Tomato Very Finely Diced
2 cups of Chilled Yoghurt
¼ tsp Black Pepper
½ tsp Roasted Cumin Powder
¼ tsp Red Chilli Powder
1½ tsp Chaat Masala
1½ tsp Sugar
Salt to taste
1 cup Khajur Ambli ni Chutney
½ cup Mint Water
2 tbsp Coriander Finely Chopped
½ cup Pomegranate Seeds (when available)
Method:
Add the black pepper, red chilli powder, roasted cumin powder, ½ tsp chaat masala, sugar and salt to the yoghurt, whisk until smooth and set aside.
Take each puri and gently crack open the top with your index finger or thumb for stuffing.
Stuff it with potatoes, kala chana, and onion, pour the yoghurt on top, drizzle the khajur ambli chutney, and sprinkle the sev with a few drops of mint water.
Sprinkle with chaat masala and garnish with chopped coriander and pomegranate seeds.
Serve immediately and enjoy.
