Ingredients:
500 grams of Plain Flour
125 grams Self Raising Flour
75 grams Gram Flour (Besan Flour)
2½ tbsp Sesame Seeds
½ tbsp Ajmo (Ajwain Seeds)
1½ tsp Green Chilli Paste
½ tsp Turmeric Powder
2 tsp Salt
Spice Powder:
6 tbsp Icing Sugar
1 tsp Red Chilli Powder
½ tsp Salt
Method:
Sieve the plain flour, self-raising flour and gram flour in a bowl; add the sesame seeds, ajmo, green chilli paste, turmeric and salt, and mix well until the spices have combined.
Add water and knead the dough well until soft; cover it and rest for 30-40 minutes.
Divide the dough into small balls, about 2½ inches, and shape it into round balls.
Dust the work surface with plain flour and roll the dough into even circles about 12-16 inches and 1mm thin. Place them on a cloth separately, do this with all the dough, and cover them.
Heat the oil in a wok on medium-high heat.
Cut parchment paper about 16 inches long. Take each round spear and place it on the parchment paper. Using a pizza cutter or a knife, cut the spears into 1-inch strips, one in the middle.
Slide the fafara in the oil, deep-frying, keep flipping until nice and crispy, drain over kitchen paper and sprinkle the spice powder on top.
Repeat the frying process until all the fafaras are fried, cool them and store them in an airtight tin.
Enjoy them with breakfast or a teatime snack.
