Preparation Time: 10 min. Cooking Time: 25 min. Serves 4
Ingredients:
4 Red Potatoes Medium Size
1 cup Roasted Peanuts Coarsely Ground
2 tbsp Coriander Leaves Finely Chopped
½ Juice of Lime
3 tbsp Oil
1 tsp Cumin Seeds
1 tbsp Ginger Paste
½ tsp Black Pepper
1 tsp Sugar
Salt to taste
Method:
Peel and cut the potatoes into small cubes about 1cm, wash and drain.
Heat the oil on medium heat. Once hot, add the cumin seeds until they start to crackle. Add the potatoes, ginger paste, black pepper, sugar, and salt.
Add 1½ tbsp of water and cook on low heat until the potatoes are soft, stirring occasionally.
Add the ground peanuts and lime juice, mix well and simmer for 2-3 minutes.
Garnish with coriander leaves and serve hot.
