Kobi Nu Shaak

Preparation Time: 8 min. Cooking Time: 20 min. Serves 3-4


Ingredients:

1 White Cabbage Head Medium Size

2 Tomatoes Chopped

4 tbsp Oil

1 Dry Red Chilli

¾ tsp Mustard Seeds

½ tsp Cumin Seeds

¼ tsp Asafoetida (Hing)

1 tsp Turmeric Powder

1½ tsp Chilli Powder

1½ tsp Coriander-Cumin Powder (Dhana Jiru)

½ tsp Jaggery (Gōr)

Salt to taste


Method:

  1. Wash and shred the cabbage about 5mm thick.

  2. Heat the oil over medium flame and add the dry chilli. Once hot, add the mustard seeds, cumin seeds, and asafoetida.

  3. Then add the cabbage, turmeric powder, and salt, mix well, and cook for 3-4 minutes, stirring occasionally.

  4. Add the tomatoes and cook until almost done, stirring occasionally.

  5. Add the chilli powder and coriander-cumin powder, cover with the lid for about 3 minutes, then stir and cook for 2-3 minutes more.

  • Enjoy hot with roti and dal bhat!
