Leek Ki Sabji

Preparation Time: 10 min. Cooking Time: 10 min. Serves 4
Ingredients:
4 Stalks of Leek
3 tbsp Oil
¾ tsp Mustard Seeds
½ tsp Cumin Seeds
¼ tsp Asafoetida (Hing)
¾ tsp Turmeric Powder
½ tsp Chilli Powder
¾ tsp Coriander-Cumin Powder (Dhana Jiru)
Salt to taste
Method:
Wash, dry and slice the leeks, removing any sand or grit between the layers.
Heat the oil over medium flame. Once hot, add the mustard seeds, cumin seeds, and asafoetida.
Add the sliced leeks, turmeric, chilli powder, coriander-cumin powder and salt.
Mix well and cover with the lid for about 3 minutes on low heat, then stir and cook for 3-4 minutes or until soft (Don't overcook them)
Serve hot with paratha and a cup of tea.
