Preparation Time: 5 min. Cooking Time: 25 min. Serves 4
Ingredients:
5 Green Matoke (Raw Green Bananas)
1 Medium Onion Very Finely Chopped
1 Medium Tomato Very Finely Chopped
1 tbsp Coriander Leaves Finely Chopped
1 tbsp Ginger Paste
1½ tbsp Oil
1 tsp Cumin Seeds
¼ tsp Asafoetida (Hing)
½ tsp Turmeric Powder
1 tsp Red Chilli Powder
1 tsp Coriander-Cumin Powder (Dhana Jiru)
1 tsp Sugar
Salt to taste
Method:
Boil, peel and mash the matoke.
Heat oil on medium heat, and add the cumin seeds and asafoetida until they crackle.
Add the onions with ¼ tsp salt, cook until soft and translucent and add the tomatoes and ginger paste.
Cook the tomatoes until soft. Add turmeric powder, chilli powder, sugar, and salt; sauté for 30 seconds.
Add the mashed matoke with ¼ cup of water, mix well, and cook on low heat for 5 minutes, stirring occasionally.
Garnish with coriander leaves and enjoy hot on its own!
