Ingredients:
375 grams Oreo Biscuits + 10 Biscuits for topping
¼ cup Melted Butter
300ml Whipping Cream
250 grams of Cream Cheese
⅛ cups Icing Sugar
Method:
Crust:
Grease the 9-inch loose-bottomed pan springform and line the pan's bottom and side with parchment paper.
Blitz 225g Oreo biscuits in a food processor and mix with the melted butter.
Press the mixture into a 9-inch springform pan about ½ inches up the edge, and chill it in the fridge while you make the filling.
Filling:
Place 150 grams of Oreo biscuits into a large zip-lock bag, crush them with a rolling pin or other hard object and set aside.
In a large bowl with an electric mixer, whip the whipping cream until stiff, then add the cream cheese and icing sugar and mix until combined.
Add the crushed Oreo biscuits, fold them in and spread the filling into the prepared crust; chill for at least 5-6 hours or overnight.
Once chilled, remove from the tin and decorate with Oreo biscuits.
Slice and serve cold.
