Preparation and Cooking time: 1 Hour: Serves 4
Ingredients:
10-12 Slices of White Bread
750-800 grams Potatoes
1 Large Onion Very Finely Chopped
2 tbsp Ginger Paste
1 tbsp Green Chilli Paste
½ Juice of Lime
1 tsp Amchur Powder (Mango Powder)
1 tsp Taj Laving Masala
1½ tbsp Sugar
Salt to taste
1½ tbsp Oil + for Deep Frying
Method:
Peel and steam the potatoes, mash them and set aside.
Meanwhile, heat the oil in a pan. Once hot, add the onions and ¼ tsp salt and sauté until soft. Add the ginger and green chilli paste and taj laving masala sauté for a minute.
Add the onions to the mashed potatoes with lime juice, amchur powder, sugar and salt, mix well, make small rolls of the mixture and set aside. (Depending on the size of the bread)
Take the bread and slice off the crust; take some water in a plate, dip one slice in the water, and let it absorb some water. (About 3-5 seconds)
Take the bread and press it between your palms to remove the excess water. Place the potato stuffing on top and gently roll the bread over, pressing and sealing all the edges neatly before placing them on a plate.
Heat oil for deep frying on medium-high heat. Add the bread rolls about 3-4 at a time, and fry them until crisp and golden brown, turning them occasionally. Drain on kitchen paper.
Enjoy warm with tomato ketchup or green chutney.
