Ingredients:
1kg Raw Mango
1½ kg Sugar
½ tbsp Cumin Seeds
1 tbsp Red Chilli Powder
1 tbsp Turmeric Powder
2½ tbsp Salt
Method:
Wash and peel the mangoes, cut them into tiny cubes about ½cm and put them in a saucepan. Add the turmeric and salt, mix well, and let it sit for 3 hours.
Sieve the mangoes and leave them for 5 minutes. Put them back in the saucepan, add the sugar, and mix well until the sugar has combined.
Cover the saucepan with cheesecloth and put a rubber band or tie around it; keep it in a sunny and warm place for 6-8 days; open and stir the mangos twice daily, morning and evening, then cover and put it back.
By now, the sugar must have thickened like a sauce. Add the cumin seeds and chilli powder, mix well, and leave it for a day.
Transfer it into the glass jar and refrigerate; it will last up to a year.
NB:
In countries where the weather is too hot, it will take about 4-5 days.
