Ingredients:
2 Loaf Ciabatta Bread
2 Lager Vine Tomatoes Finely Diced
1 Red Onion Very Finely Diced
1 Thin Green Chillies Very Finely Sliced
2 tbsp Fresh Basil Finely Chopped
2 Cloves Garlic Minced
3 tbsp Extra Virgin Olive Oil
½ tsp Mix Herbs
½ tsp Black Pepper
Salt to taste
Grated Mozzarella or Cheddar Cheese (Optional)
Method:
Preheat an oven to 200°C or air fry.
Mix the tomatoes, onions, chopped basil, minced garlic, olive oil, herbs, black pepper and salt in a bowl and set aside.
Warm the ciabatta bread for 5-8 minutes, then remove from the oven, cut in half and toast them for 5-6 minutes until just browned around the edges.
Spoon the tomato mixture over each slice, drizzle with olive oil, and serve immediately.
NB:
Sprinkle with grated cheese if you desire!
