Vegetable Tagliatelle

Preparation and Cooking time: 45 Minutes: Serves 4


Ingredients:

250 grams of Dried Tagliatelle

2 Onions Very Finely Chopped

1 Courgette Very Finely Chopped

1 Carrot Very Finely Chopped

1 Green Pepper Very Finely Chopped

½ Red Pepper Very Finely Chopped

1½ tbsp Olive Oil

¼ tsp Oregano

½ tsp Black Pepper

½ tsp Salt

Parmesan Cheese to serve


Method:

  1. First, make your Spicy Tomato Pasta Sauce (see recipe attached).

  2. Cook the tagliatelle in boiling water with 1 tsp of salt until quite al dente.

  3. Meanwhile, heat the olive oil on high in a large pan and add the oregano. Add the chopped vegetables, black pepper, and salt, and cook for 10 minutes.

  4. Now pour the tomato sauce over the vegetables and mix well. Cook for a further 5 minutes. By now, the pasta should be done.

  5. When it’s time to serve, put some tagliatelle on your plate, add the vegetables, and top it up with grated parmesan cheese.

  • Enjoy the tagliatelle with garlic bread!
