Preparation and Cooking Time: 1 hour 30 min. Serves 4
Ingredients:
2 Large Jacket Potatoes
1 Onion Small Size Very Finely Chopped
½ Green Capsicum Very Finely Chopped
2 Spring Onions Very Finely Chopped
325 grams Hot Salsa (Ready Bottle)
½ tsp Red Chilli Powder
½ tsp Black Pepper
¼ tsp Salt
Cheddar Cheese
Method:
Wash the potatoes, dry and oil them with olive oil. Place them on a baking tray.
Preheat the oven to 180 degrees, gas mark 5 and bake for an hour.
While the potatoes are baking, add the chopped onions, green capsicum, spring onions, hot salsa, red chilli powder, black pepper, and salt in a bowl. Mix well and keep aside.
After an hour, remove the potatoes from the oven, cut them in half, scoop out some potato mash; pop the skins into a baking tray, and sprinkle some salt and black pepper.
Take 3-4 tbsp of the salsa and 1 tbsp of butter, add it to the mashed potatoes, mix well.
Put the mixture back into the skins and top it up with the rest of the salsa.
Grate some cheddar cheese on top and bake for 15 minutes.
Serve hot with sour cream and chive or guacamole.
